
Pizza fritta
Pizza fritta is the older, poorer cousin of the baked pizza. Dough is stretched, filled, folded into a half-moon and dropped into hot oil. It puffs up, blisters and comes out in about two minutes. The classic filling, called completa or ripieno, is ricotta, provola, cicoli (pressed pork cracklings), a little tomato and a lot of black pepper.
It is still cheap if you eat it where Neapolitans do. At La Masardona's original shop in Case Nuove, near the station, the completa costs €6, or €3.50 in the smaller battilocchio size, on its menu checked September 30, 2026. The same thing costs €9 at the family's Piazza Vittoria branch on the seafront.

Di Matteo on Via dei Tribunali also fries at its street window, but its site blocked our checks, so we have no 2026 price.
The fillings to know
- Completa: ricotta, provola, cicoli, tomato, pepper. Order this first.
- Marinara: tomato, garlic, oregano. Lighter, and €6 at Masardona and 1947.
- Rita at 1947: provola, tomato, pepper and basil, €6.

Cicoli are pork, and so is the lard in some doughs. If you avoid pork, ask for the marinara and say so.
Montanara: fried, then topped
A montanara is a small, flat disc of dough fried until it puffs, then topped with tomato sauce and cheese. Starita in Materdei fries its montanara and then finishes it in the wood oven, with ragù, smoked provola, pecorino and basil, for €8.50. At 1947 a portion of mini montanarine is €6. Umberto in Chiaia serves three small ones for €10.50.
How to order it
- At the counter: say the filling and "a portafoglio" if you want it folded in paper to eat walking.
- Timing: fry shops serve at lunch. Masardona's hours are not on its site; in 2022 Dissapore listed it as closing at 3:30 p.m. and on Sundays. Go before 2 p.m.
- Heat: the ricotta inside is scalding for the first five minutes. Tear it open and wait.
- With it: a frittatina or a cuoppo of fried bites, both €2–€7 at the same counters.

Less than you expect when the oil is hot and the dough is well hydrated. 1947's pizzaiolo describes a dough risen up to 24 hours precisely so it absorbs less oil.
