Ragù napoletano is the sauce of the Neapolitan Sunday. Whole pieces of meat, usually beef and pork, braciole (thin beef rolled around parsley, garlic, pine nuts and raisins) and sausage, cook slowly in tomato until the sauce is almost brown. The sauce goes on the pasta; the meat comes after as a second course.

The easiest place to eat it is Tandem, which opened in July 2013 as the first restaurant in the city built entirely around ragù and genovese. Its English menu, dated July 2026, lists broken ziti or rigatoni with ragù at €12, fresh fusilli at €14, and ragù meatballs or braciola as a second course at €14.

If a menu in Naples says "ragù" without a qualifier, it means the Neapolitan one.

Where to eat it

  • Tandem runs several places in the old town and one on the Vomero (Via Bernini), plus takeaway counters on Via Mezzocannone and at Porta Capuana. Its site marks the Sedile di Porto branch as temporarily closed. The "scarpetta", wiping the plate with bread, is encouraged.
  • On a pizza: Umberto in Chiaia tops its "Nonna Ermelinda" pizza with ragù and meatballs (€13.50, June 2026 menu).
  • Fried: La Masardona fills a pizza fritta with ragù (Nonna Pizza, €6.50), and Starita tops its montanara with it (€8.50).

What to order at Tandem

  • First time: ziti spezzati with ragù, €12. The hand-broken Gragnano PGI pasta holds the sauce.
  • Hungry: add the braciola (€14), the rolled beef cooked in the sauce, or split both between two.
  • Two people, undecided: the Sfizietto Tandem (€28) is a sharing board with buffalo ricotta, a taste of ragù and genovese, a 230 g buffalo mozzarella, bruschette and lard-and-pepper taralli.
  • Extras: meatball, ricotta or provola on any pasta, €2.50–€4.

How to spot a good one

Ragù is a home dish: it needs a morning of low heat and someone to stir it. A restaurant built around it, like Tandem, can keep a pot going all day; a place that lists it as one line among forty dishes may not. Before you order elsewhere, look for three things:

  • Color: dark brick red, close to brown, not bright tomato red. Bright red means it was cooked quickly.
  • Texture: thick enough to coat the pasta and cling, with a film of fat on top.
  • The meat: ask what cooked in it. A real ragù has pieces you can eat as a main course, not just mince.

If a weekday menu at a trattoria that does not specialize offers ragù, ask whether it was made today. The answer tells you what to order.
