Ziti alla genovese €12–€16 Onions cooked 10–12 hours No pesto, no basil

The genovese is the other great Neapolitan meat sauce, and it has no tomato worth mentioning and no basil. Beef and a heap of onions, with carrot and celery, cook very slowly until the onions collapse into a thick, glossy, brown cream. The sauce dresses the pasta; the beef, now falling apart, is eaten with it or after it. Osteria della Mattonella, which sells its genovese in jars, says its own takes 10 to 12 hours.

In 2026 a plate costs €12 at Tandem, which lists ziti or rigatoni "with ragù or genovese sauce" at the same price on its July 2026 menu, and €16 at Umberto in Chiaia, whose June 2026 menu names the onion: the copper-skinned ramata of Montoro.

Why is it called genovese?

Nobody knows for sure. The name is old, and the theories (Genoese cooks in Naples, Genoese sailors, a cook nicknamed "'o Genovese") are stories rather than documents. What matters on a menu: in Naples, alla genovese means onions and beef. Osteria della Mattonella's own product page puts it plainly: despite its name, the recipe is typical of Naples.

Genovese or ragù?

If you have one lunch, the ragù is the red one: tomato, pork and beef. The genovese is the brown one: onion and beef, sweeter and richer. Tandem serves both at €12 and its Sfizietto sharing board (€28, for two) lets you taste them side by side, with bread for the scarpetta.

Ordering tips

  • Ask for grated cheese. Genovese is often finished with Parmigiano or pecorino at the table.
  • Vegetarian? Tandem makes a vegan genovese, available on all its pasta.
  • What to drink: Mattonella suggests a dry Campanian white, such as Falanghina del Sannio or Greco di Tufo, or a fresh, low-tannin red.
  • Look at the color. A good genovese is amber to brown and thick enough to cling. Pale, watery onion means it was rushed.
  • At lunch. It is heavy. You will want a walk afterward: the Spaccanapoli loop starts close to Tandem's old-town branches.
